Put in the meat, etc., adding a little more seasoning and cold stock almost to cover. Shape the lid, damp the edges of the pastry, and seal firmly. The pudding should be at least one inch below the top of the basin. Cover with greased paper, then foil, or a cloth, and tie well. Cook in a large pan of boiling water (with a lid) for 5 hours.
